Gluten Free Chicken Crust Pizza

STAPPPPP YOUR SCROLL this is an EASY MAKE that’s high in protein and yummy on the taste buds.

Crust INGREDIENTS: 1 CUP OF CHICKEN, 1 CUP OF MOZZARELLA CHEESE, 1 EGG (yup that’s it) You can add seasoning upon desire. I personally like adding fresh basil, garlic, & Italian seasoning.

TOPPINGS: (upon desire) pizza sauce, mozzarella cheese, pepperoni. Hubby’s favorite pizza toppings are pepperoni, bacon & banana peppers.

Step 1: Add all of your crust ingredients to your blender & it should look something like this when its done.

Step 2: Place parchment paper on your pan and coat it with your favorite oil. This is a must so the crust doesn’t stick. I like use coconut oil. Pat chicken crust flat on parchment paper.

Step 3: Cook for 25 minutes at 375. The crust should look golden brown all over.

Step 4: Add your toppings upon desire.

Step 5: Pop back in for about 5 minutes until cheese or until cheese is melted.

Eat the whole thing with no guilt! :)

Wonder Whips

Ingredients: 
-1 cup plain Greek yogurt
-2 tsp PB2
-1 packet of stevia
-A cap full of vanilla extract or 1 pump of skinny girl syrups (I like salted caramel) 
-1/2 tsp cacao powder (optional) 

Topping ideas: 
-Fiber one cereal
-Snack bar (I like the extra crunch) 
-Handful of dark chocolate chips

Eat right away OR place in freezer for around 20-30 min and eat! Don’t leave in freezer it will be too hard to eat!

This is great for people that have a sweet tooth and want dessert without the guilt! 

Zucchini Ravioli

What you’ll need:

4 medium zucchini
2 c. ricotta
1/2 c. finely grated parmesan, plus more for garnish
1 large egg, lightly beaten
1/4 c. thinly sliced basil, divided
1 clove garlic, minced
kosher salt
Freshly ground black pepper
1 1/2 c. marinara
1/2 c. shredded mozzarella

Directions:
PREP TIME: 0:20
TOTAL TIME: 0:50
Preheat oven to 375° and grease a large baking dish with olive oil.

Make the Noodles: Slice two sides of each zucchini lengthwise to create two flat sides. Using a vegetable peeler, slice each zucchini into thin flat strips, peeling until you reach the center. These are your “noodles.”

Make the Filling: In a medium bowl, combine ricotta, Parmesan, egg and 2 tablespoons basil and season with salt and pepper.

Assemble the Ravioli: Lay two strips of zucchini noodles so that they overlap lengthwise. Lay two more noodles on top, perpendicular to the first strips. You should end up with a “T” shape. Spoon about 1 tablespoon of filling in the center of the zucchini. Bring the ends of the strips together to fold over the center, working one side at a time. Turn the ravioli over and place in the baking dish seam-side down. Repeat with remaining zucchini and filling. Pour marinara around the zucchini and top ravioli with mozzarella.

Bake until zucchini noodles are “al dente” and the cheese is melted and starting to brown on top; 25 to 30 minutes.

Top with remaining basil and Parmesan and serve.

 

TIPS: Don’t stress over the zuccini noodles. It took me about 3 tries before I felt confident on how to assemble them. Also don’t stress if you run out of a certain ingenditent. I learned to just roll with it. Example: I ran out of pasta sauce so instead I added a can of tomatoes on top that I had on hand and it still turned out delicious!

Desserts

  1. Shakeology Mug Cake - 1 egg + 2 Tbsp. almond milk + 1 scoop Chocolate Shakeology + 1 Tbsp. cocoa powder + ¼ tsp. baking powder + 1 Tbsp. peanut butter (or almond butter). In greased mug, beat egg and add almond milk. Add Shakeology, cocoa powder, & baking powder. Stir until mixture forms a batter. Microwave for 1 minute (may need 30 seconds more). Top with peanut butter.
  2. Pancakes - 1 scoop Chocolate Shakeology + 1/4 cup rolled oats + 2 tbsp. unsweetened almond milk + 1 tsp. vanilla + 1 tsp. baking powder + 1 egg + 1 egg white. Blend and pour into pan to cook like any other pancake.
  3. Cookie Balls – 1 cup Chocolate Shakeology + 1 cup peanut butter + 1 cup quick cook oats + 1/3 cup honey. Combine ingredients. Roll into balls and eat.
  4. Frozen Chocolate Shakeology Bark - 1 tbsp. coconut oil, melted + 1 scoop Chocolate Shakeology, stirred until blended. Pour into parchment paper-lined pan and freeze until hard. 
  5. Chocolate Ice Cream - Chocolate Shakeology + 1.5 cups of Almond Milk  + 1/2 Banana + 1 Tbsp. Peanut butter + 1 cup (or more) of Ice. Freeze until desired consistency. Stirring every half hour.
  6. Chocolate Energy Cookie Balls - 1 1/2 scoops Chocolate Shakeology + 1/2 cup almond flour + 1/2 cup old-fashioned rolled oats + 1/4 cup almond butter + 1/3 cup unsweetened almond milk + 1/4 cup sliced almonds. Combine Shakeology, almond flour and oats, mix well. Add almond butter and milk. Roll into balls and then roll into almonds.
  7. Peanut Butter Oat Bars - 1 scoop Chocolate Shakeology + 1/2 cup old-fashioned rolled oats + 1 scoop protein powder + 1/2 cup peanut butter + 1/2 mashed banana + nonstick cooking spray. Combine ingredients. Mix well. Spray pan with nonstick spray and press mixture into pan. Cover with plastic wrap and press down. Freeze for 3 hours before cutting into bars.
  8. Smoothie Bowl - 1 scoop Chocolate Shakeology + 3/4 cup unsweetened almond milk + 1 frozen banana + 1 cup ice. Blend until smooth. Pour into bowl. Top with peanut butter, fruit, and nuts/seeds/shredded coconut.
